Easy Spanish Rice in a Rice Cooker



This is a family favorite recipe that I make up at least once a week. Anytime we are having mexican food this is an easy side dish that my kids will gobble up. I love how easy it is to throw together, stir and then let my rice cooker do all my work.

I add in all my dry ingredients and then my water, give it a good stir, close the rice cooker and press the white rice setting. I'll usually start this at the same time as I pop my entree in the oven whether its enchiladas, oven fajitas, or just browning up some hamburger to make burritos with. If my rice gets done too early it can simply steam in the cooker til I am ready to use it.

What makes this recipe even better is that it can be made 100% from my pantry. No chopping onions or making sure I have fresh cilantro. No small cans of tomato sauce which always seem to disappear. By using quality foods from my Thrive pantry I'm able to create a quick side dish with the best ingredients.

Easy Spanish Rice
Here's what you'll need:

2 cups Thrive white rice (not instant)
1/4 cup Thrive freeze dried onions
6 tablespoons Thrive tomato powder
2 teaspoons Thrive chicken bouillon
1 teaspoon salt
1/4 teaspoon garlic powder
1 tablespoon Thrive freeze dried cilantro 
plus 5 cups water

Directions: Add all dry ingredients to your rice cooker, add water, stir and set rice cooker to 'white rice' setting.
