Pumpkin Magic Squares {using Halloween Candy!}

Don't you just love the smells of fall? Spiced cinnamon, hot chocolate, pumpkin and bread baking are what I think of when I think fall.

I also think of my cute kiddos decked out in their costumes and ready to take the town by storm as they 'trick or treat' themselves into a sugar coma. ;)

I'm guessing you've got a whole lotta this in your house right now. Buckets full? Yeah, me too.

I love this recipe I worked on this week that uses up some of the halloween treats and throws in one of my favorite fall treats - Pumpkin!

I used the Thrive Vanilla Sugar Cookie Mix as my base. I love our bakery line because it makes my life easier. You can use any sugar cookie recipe you love too. Press the cookie mix into the bottom of a greased 9x9. Bake for 15-20 minutes. You want the cookie crust to be cooked through - especially in the middle.  Cook for 5 minutes before next step.

Then add on some layers of goodness. Pretty much raid your cookie mix-ins pantry and chop up some of those delicious candy bars. I think a Heath and Butterfinger mix would be to-die-for! I used coconut, white chocolate chips, milk chocolate chips and an assortment of our halloween candy. I wish I would have had almonds or pecans to toss in too.

Then whip up your sweetened condensed milk, pumpkin puree and pumpkin pie spice. Don't have any pumpkin pie spice? No problem! Make your own using this great reference chart I found over on Pinterest. Spread the mix over top of your 9x9 and then bake at 350 for 28-30 minutes. You want to make sure it is set. Completely cool before you cut it up.

And Ta-Da! Goodness! 

Sugar Cookie Crust:
1/4 Cup plus two tablespoons softened butter
1/2 of one egg (or use 1/2 tablespoon whole egg powder plus 1 tablepoon of water)
1 1/2 Cup Vanilla Sugar Cookie Mix
plus 2 tablespoons of water
*Whip up butter and egg in mixer. Add in dry Cookie Mix. Cream together. Press in the bottom of a 9x9 greased pan. Bake at 350 for 15-20 minutes.

Goodness Layers:
1/4 cup each of at least 4 of these: Coconut, Butterscotch, White Chocolate Chips, Toffee, Chopped Pecans/Almonds, Milk Chocolate Chips, Chopped Candy Bars
*Layer and toss evenly across cooled cookie crust.

Pumpkin Magic Layer:
1/2 Cup Sweetened Condensed Milk
1/4 Cup 100% Pumpkin Puree
1/2 teaspoon Pumpkin Pie Spice (make your own mix with this recipe)
*Mix together well and then spread across top of the goodness layers. Bake at 350 for 28-30 minutes. Let cool completely before cutting.
