Meal Plan Monday (a little late)

I apologize for not getting my meal plans posted on Monday - it has been a crazy week and as you can guess it's reflected in how these first two days of the week played out!

Kyson's birthday party on Sunday was  a lot of fun! We had lots of food leftover {because that's better than running out right? right. haha} So Monday night this week I skipped making a casserole dish I had planned and we chowed down on more hamburgers, hot dogs, potato salad, green salad and chips. My kids were in heaven! Then Tuesday (yesterday) it was one of those days that I was busy, busy running around my house. I know I had everything to cook a meal. I could have even done a quick 10 minute one but opted for take out pizza. And that's okay - we went with the cheap stuff (which my kids love better than the good more expensive kind) and it didn't break our budget.

Today though I am starting fresh and getting in gear! We're having Chicken Broccoli Casserole. I shared the recipe, a family favorite, a few months ago. This time around I won't be using freeze dried chicken. I had planned for this meal so I am using some of the chicken breasts I picked up at Sam's Club during my shopping trip. Everything else in the recipe is the same - down to the Thrive Egg Noodles. They are so amazing! They are fresh and taste like homemade. Yum!
