{Recipe) Chocolate Peppermint Brownies

I am a big fan of Thrive's Fudge Brownies. They are super easy to make up (just add water - no eggs, no oil, etc) and we love how yummy they are! I have been experimenting with different brownie recipes using Thrive as the base and this week we tried out Peppermint! SO GOOD! These are super easy and my kids gobbled them up. These are good all year round or as a special treat at Christmas when you make up cookie platters for neighbors and friends. 

To make an 8x8 pan of Chocolate Peppermint Brownies:

Preheat oven to 350 F. Measure 3 Cups of your Thrive Brownies and put in a medium bowl.

Add 1/2 C. hot water, mix and let stand for 5-10 minutes.

Then add my super special secret ingredient... DoTerra Peppermint Essential Oil. If you haven't heard of DoTerra before they have amazing quality essential oils. They are Certified Pure Therapeutic Grade (CPTG) and are safe to be taken internally which is why you can cook with them! So mix in 12 drops of the DoTerra Peppermint Essential Oil. Then pour batter into a greased 8x8. And bake for about 22 minutes. Let cool completely before cutting into them... which I don't have the patience for... and that's why my brownies aren't perfect cute squares. (I promise they still taste just as good). I love that the minty flavor sticks around and that my whole family loves these.

In fact, this morning I caught my three year old with the container of brownies in the playroom... he was frantically stuffing his face before I could pry what was left from his hands. So they're kid approved! haha
