{Recipe} Chicken Enchiladas

Chicken Enchiladas are nothing new at our house. They are a favorite for both my husband and I. I love to try new recipes for this classic dish so when I saw a THRIVE recipe on the back of one of my cans I knew I had to try it out.
One of this month's specials is Chicken TVP (textured vegetable protein). We have never tried TVP of any sort in our home. I was super skeptical but curiosity won me over {and the affordability factor too!} so I purchased 1 #10 Can to try out. I am thankful I did!
My husband and I both loved it in this dish! And honestly, if I didn't tell you that it was TVP and not real chicken I don't think you would have noticed. I would recommend this cost saving meat alternative for your food storage ~ especially if you have some tasty Chicken casserole recipes up your sleeve :)
I followed the recipe that THRIVE provided for the most part. I did use fresh milk in place of the instant milk. In the future I would love to try out this recipe as a completely shelf stable one - all powdered/shelf stable ingredients. I'll let you know when I do and how it turns out.
THRIVE Chicken Enchiladas
2 C THRIVE Chicken TVP
2-3 C water
1 C THRIVE Non-fat Powdered Milk, prepared (I used fresh)
1 can diced green chiles (I used 1/2 salsa)
2-3 Cups Cheese
1 can cream of chicken or celery soup
1 small onion, chopped
Flour or Corn tortillas (I used corn)
1-2 C sour cream
In a saucepan, bring water to a boil. Add THRIVE Chicken TVP granules and turn off heat. Let sit for 10-15 mins; drain any excess liquid. Combine soup, milk and sour cream in a large bowl stir until well mixed. Stir in chicken TVP, green chiles, and onion. Preheat oven to 350 F. Spoon 1 C of mixture into bottom of a 9x 13 pan to cover the bottom. Spoon a small amount of chicken mixture and cheese into each tortilla. Rolle up tortilla to enclose filling. Arrange enchiladas in prepared dish. Spoon remaining mixture and cheese on top. Cover lightly with foil and bake for 25 mins. Top with lettuce, olives and tomatoes if desired. Makes 8-10 servings.
